Strawberry Matcha Chia Pudding (with a Basil Seed Twist)
35g of protein, high fiber, and meal prep heaven in a jar
Let me introduce you to my latest obsession: Strawberry Matcha Chia Pudding (well… basil seed pudding if we’re being technical). It’s packed with over 35 grams of protein, tons of fiber, and the kind of creamy-sweet perfection that makes healthy eating feel like a treat.
I’ve lost over 80 pounds eating breakfasts like this—easy, high-protein, and actually satisfying. This one checks every box.
What Makes It Special
Over 35g protein per serving
High in fiber, calcium, potassium, and antioxidants
Lightly sweet with a matcha–strawberry combo that’s chef’s kiss
Great for meal prep—make two and you’re set for the week
Ingredients (Makes 2 Servings)
1 ready-to-drink vanilla protein shake (I used OWYN, about 1.5 cups)
Or sub 1.5 cups milk + 1 scoop vanilla protein powder2 tsp matcha powder
I used 3 tbsp of Clevr’s Honey Pistachio Matcha Latte Blend and highly recommend it6 tbsp basil seeds (I used Zen Basil) — chia seeds work too!
Optional: sugar-free strawberry chia jam or fresh strawberries for topping

Why Basil Seeds?
They’ve become my go-to swap for chia lately. Here's why:
2x the fiber
2x the calcium, iron, and potassium
Packed with antioxidants and polyphenols
And bonus—they thicken faster than chia!
How to Make It
Whisk Together the Base
In a mixing bowl, combine the protein shake (or milk + protein powder) with your matcha. Whisk until smooth and fully blended.Add Your Seeds
Stir in the basil seeds (or chia if that’s what you have). Mix well to avoid clumps.Let It Thicken
Allow the mixture to sit for about 5–10 minutes, then pour into jars or containers. I like using a measuring cup to keep things clean and easy.Chill Time
Pop your pudding in the fridge for at least 30 minutes. It’ll thicken into that perfect creamy texture—and you can keep it in the fridge for up to 5–7 days.Top It Off
When ready to serve, swirl in a spoonful of sugar-free strawberry chia jam (my recipe is here if you missed it!) or fresh strawberries.
Why You’ll Love It
This is one of those breakfasts you’ll find yourself looking forward to. It’s:
Lightly sweet
Perfectly creamy
Balanced with that earthy matcha and bright strawberry
Keeps you full for hours
And honestly? It tastes like dessert. But better.
